BIGO’S was born a restaurant called in the city of Matamoros, Tamaulipas in Mexico.
“Sr. Taco” became very popular among restaurant goers thanks to great seasoning and unique recipes. Patrons came to ask for all round fajitas to be able to ‘taquear”, which led to the idea of . Thus creating the opportunity to increase the number dishes served, with the as a core element. This gave way to Alambres de Costilla, Pollo y Alambres de Pollo that were christened as .

When this concept became very successful, it was time to look for a more suitable commercial name, thus became, and a second restaurant was opened in Matamoros 2 years later.
The successes of the Parrilladas led to customers buying them to take home, which is when the idea of was set in motion.
